Question: Testing Galaxy after upgrade

Hi, I am trying to figure out an easy way to test all of the tools that I have after I perform either a system or a Galaxy upgrade. Easiest way that I can think to do this is to run the tools with some sample data, then create a workflow from the history, and then re-run the workflow into a new history and verify that results look the same/no errors occur.
But there is an issue that I run into: the workflows for me do not seem to pin the initial input to tools. Is there a way to pin a specific dataset to the tool inputs in workflow?
On a side note, I see that a lot of tools include test data, is there some way to get the tool to run through that test data?
