I am trying to run some simple analysis but the server seems extremely busy and a fastqc is taking over half an hour.

There is an Ansible playbook that automates installing tools to Galaxy: https://github.com/galaxyproject/ansible-galaxy-tools
The list of tools on Main is also public: https://github.com/galaxyproject/usegalaxy-playbook/tree/master/files/galaxy/usegalaxy.org/var
There is also script that allows to fetch toolset of given Galaxy in the .yml format and another one that installs tools to given Galaxy based on that .yml file. See them here: https://github.com/galaxyproject/ephemeris/tree/master/ephemeris
